Cranberry Pecan Piglets

Just finished making a double batch of cranberry/pecan “Piglets” for the book signing on Saturday! Piglets are one of my favorite recipes I like to bake this time of year…when I’m not slaving over a hot stove for hours making tomato soup & grilled cheese sandwiches! Hope there are some left by Saturday! YUMMO!

 

Cheryl’s Cranberry/Pecan Piglets

3/4 Cup All Purpose Flour
1/2 Tsp. Baking powder
1/2 Tsp. Salt

2 Cups Fresh Cranberries
3 1/2 Cups Chopped Pecans
1 8 Oz Pkg. Chopped Dates

2 eggs
3/4 Cup Granulated Sugar
1 Tsp. Lemon Extract

1. Sift flour, salt and baking powder together in large bowl
2. Combine cranberries, nuts and dates with the flour mixture.
Toss until coated.
3. Beat eggs, sugar and lemon extract until fluffy.
Add to mix above (#1 & #2)
4. Pack into cupcake papers in cupcake pans…medium or small ones work the best
5. Bake at 300 degrees for 40-45 minutes. Cool 15 minutes

These store in the refrigerator for a couple of weeks!
